As you may or may not know, I like my men like I like my cheese—sharp and a bit nutty. Fortunately for you, Ari, who is usually pretty sharp, went nutty last week and ordered too much of this Fermin Spanish chorizo (of Salamanca). The Iberico pigs live and eat better than many of us, and frankly, it shows. This clean living creates a really nuanced, well-balanced, and freakin’ delicious product.
